Today is a sad day

Today marks the 2 year anniversary of my beloved cat passing away. He was my first pet I got when I moved out on my own. I loved him more than anything in the world, the same way I love my child. Maybe some of you think that is absolutely insane, but then some of you totally get what I am saying! I miss him every day that goes by.

Anyways, let's get back to what this blog is about. THE SLEEVE! Ha. I have a picture of last nights awesome dinner! Turkey BLT pizza! I cut it into 4 pieces. I thought ok I can eat half of this baby! NOT! In reality I wanted the entire thing, my stomach said "OH HELL NO!" I ate one quarter slice, so freaking good! I bite into another quarter piece...and then the dog ate that remaining piece and the remaining other two pieces. I was sad because it tasted to so good and I wanted more. But then I was happy too, because before this surgery I could easily eat two of the tortilla pizzas plus some if I wanted to!

Turkey BLT Tortilla Pizza

2 slices of Low Sodium Turkey Bacon
1 Low Carb Tortilla of your choice
1/4 cup of Mozz. Cheese (I used Monterey Jack)
As much chopped lettuce and tomato as your little heart desires!
1 - 2 tbls of Light Mayo or Light Ranch

I cooked my bacon extra crispy and broke it up into pieces. I take the tortilla and place it in my toaster oven to get a little crispy. Then take it out and place the cheese and turkey bacon on it. I place that back in my toaster oven and toast it up until the cheese is bubbly and the outside of the tortilla is brown and crispy. I then squeeze or spread my mayo on top and throw on the lettuce and tomato. Cut it and enjoy heaven! :]
